Kombucha has a long history and recently became very popular again. This fermented tea beverage is a fizzy, slightly acidic drink that is mostly made of black and/or green tea, sugar and scoby.

Scoby means Symbiotic Culture Of Bacteria and Yeast, which causes the fermentation of your drink by a transformation of sweetened tea into alcohol and CO2, whereas the bacteria in the fungus consume the alcohol and convert them to organic acids, like for example acetic acid. If you are looking for a refreshing drink with low alcohol content, Kombucha might be a great addition to your brewing activities.

Kombucha is quite easy to make and with a fermentation duration of only about 14 days you won’t have to wait too long before you can enjoy your self-made drink. But how do you know if your Kombucha is ready to drink, how much sugar is consumed and if the scoby is doing it’s job?

EasyDens is the perfect tool to follow along the fermentation process of your Kombucha day by day. With only 2 mL sample volume you can quickly check what is going on inside your beverage. The measurement relies on the density of your drink, because compounds like sugar, alcohol and the different acids that are formed all affect the density of the Kombucha.

During fermentation of Kombucha, the density [g/cm³] and sugar content [°Brix] are decreasing over the time. This is the result of alcoholic fermentation. The alcohol value is usually in the range of 0.1-3 (% Vol.). With EasyDens you can see how much sugar is consumed by the scoby and it gives you an estimation of the alcohol content during and after the fermentation. You only need the specific gravity of the first brewing day after the bacteria culture is added (Original Gravity) and the specific gravity at any time during and after the fermentation (Final Gravity).
